Chinese Takeaway Egg Fried Rice

  1. If you're not using microwave rice you need to cook your rice and let it sit in the fridge overnight. 
  2. Put your rice in a large container/bowl and add Dark Soy Sauce, Light Soy Sauce, Secret Takeaway Seasoning or Salt & MSG.  Mix well.  The rice should be a nice light brown colour.
  3. Whisk your eggs in a cup or bowl. Add Secret Takeaway Seasoning or Salt & MSG.
  4. Add a generous amount of oil to a wok, and heat until it almost starts to smoke.
  5. Add the egg to the wok and leave for 20-30 seconds. Mix once, then leave. Repeat until the egg is cooked. 
  6. Add the rice to the wok and leave for 20-30 seconds. Mix fast, and leave for another 20-30 seconds. 
  7. Repeat step number 6 until the rice starts to appear more "sticky" and the egg is mixed in.
  8. Serve!

Tips & Tricks

  • A hot wok is really useful in achieving great flavour.  The hotter, the better!
  • Use our house blend of Takeaway Seasoning for that authentic taste.
  • Do not move the rice for too long. It will stick.
