Chinese Takeaway Egg Fried Rice

Ingredients
- 2 Sachets Microwave Rice OR 400g Cooked Rice (Basmati/Jasmine)
- 2 Fresh Eggs OR Whole Egg Mix
- Dark Soy Sauce
- Light Soy Sauce
- Takeaway Seasoning OR Salt & MSG
- Oil
Instructions
- If you're not using microwave rice you need to cook your rice and let it sit in the fridge overnight.
- Put your rice in a large container/bowl and add Dark Soy Sauce, Light Soy Sauce, Secret Takeaway Seasoning or Salt & MSG. Mix well. The rice should be a nice light brown colour.
- Whisk your eggs in a cup or bowl. Add Secret Takeaway Seasoning or Salt & MSG.
- Add a generous amount of oil to a wok, and heat until it almost starts to smoke.
- Add the egg to the wok and leave for 20-30 seconds. Mix once, then leave. Repeat until the egg is cooked.
- Add the rice to the wok and leave for 20-30 seconds. Mix fast, and leave for another 20-30 seconds.
- Repeat step number 6 until the rice starts to appear more "sticky" and the egg is mixed in.
- Serve!
Tips & Tricks
- A hot wok is really useful in achieving great flavour. The hotter, the better!
- Use our house blend of Takeaway Seasoning for that authentic taste.
- Do not move the rice for too long. It will stick.
